Private Lunch Cruises on Bonaire with Life at 8 Knots
Below are some of our favorite lunchtime items to prepare and serve on day trips. Please know that we always review your preference sheet closely for food allergies and restrictions before preparing your menu for the day. And if you have picky eaters on board, we are open to your food suggestions.
Chicken Wings make a great snack or meal, and Captain James is a wizard when it comes to seasoning. He usually makes 3 or 4 different varietes of wings for our guests to enjoy. My personal favorite is his lemon pepper dry rub!
Sylvia's Pork Ribs is another fan favorite. We got the recipe from a fellow sailor and it's become our go-to to accompany the chicken wings to make a full meal. Served with a side of Captain James' million dollar potatoes!
Sandwich Platters are a hit with our guests who like to keep things simple. Homemade chicken salad, deli meats & cheeses, and crisp veggies is served on a variety of breads. Accompanied by fresh fruits and chips.
Coconut Rice Bowls w/ Shrimp or Mahi-Mahi is a nice, light option for seafood lovers. We add vegetables like snap peas, cucumber, and carrots to bring a burst of crispness and color to the bowl. Various sauces are available to spice things up!
Hallacas make the perfect lunch for those who want a taste of something local. Hallacas are a Venezuelan food that we source from a local chef (when available!). They are made from a corn meal that is slightly sweetened when steamed to cook inside a banana leaf. The inside is stuffed with meats or veggies. If you've ever enjoyed a tamale, you'll love a hallaca!
Vegetarian & Vegan dishes are easy for us to accomodate. A variety of salads, fresh fruits, and veggie burgers are all on our menu. And if you have a favorite recipe, share it with us! We are happy to give it a whirl.
Private Sunset Dinner Cruises on Bonaire with Life at 8 Knots
We offer 2 types of sunset cruises: a cocktail cruise with appetizers, or a dinner cruise with 1 appetizer plus a 3 course meal. No matter which cruise you choose, wine, bubbles, beer, and your preferred cocktails are also on the menu. Below is a sneak preview of what you might enjoy aboard, made according to your preference sheet:
Meat & Cheese Board is a staple for every sunset cruise, unless you are a vegetarian or vegan. In that case, we will swap it out with some nice hummus and pita bread.
Pasta Salad Skewer is a favorite appetizer that is both delicious and filling, and can also be made vegetarian or vegan.
Fresh Ceviche is made with white fish and marinated overnight to ensure you get the best bite! Served with plantain chips.
Smoked Salmon is served on top of crisp cucumber, cream cheese, and topped with lemon juice and dill.
Thai Ginger Soup w/ Shrimp is an unexpected delight that can be made mild or spicy. Served as part of your 3 course dinner meal.
Grilled Mahi-Mahi served with veggies and/or rice is our go-to for your main course.
A surprise sweet treat is offered at the end of every sunset cruise!
